You would not expect a roadside motel restaurant in eastern Manitoba to make a proper butter chicken, which is exactly why ours surprises people. Chicken is cooked down in a tomato and onion base, then finished with butter, cream and a measured blend of warm spices until the sauce is glossy and full-bodied rather than sharp.
